Apricot Nut Bread

3 Amigos The traditional "pounding of the nuts", a painful yet necessary part of making a good quality Apricot Nut Bread. Just be happy we aren't showing the "Pitting of the Apricot"...

2 ½ cups    Flour  
1 tsp    Baking soda  
1 tsp    Baking powder  
1 tsp    Cream of Tartar  
1 tsp    Salt  
1 cup    Walnuts, chopped  
1 ½ cups    Dried apricots  
½ cup    Boiling water  
¼ cup    Vegetable oil  
1 ½ cups    Sugar  
3   Large eggs  
1 cup    Orange Juice - vanilla  
1 Preheat oven to 350° and adjust rack to the middle of the oven.
2 Sift together the flour, soda, baking powder, cream of tartar and salt.
3 Chop the apricots coarsely and pour the hot water over them (do this in a food processor if you have one!).
4 Add the oil and sugar and beat for one minute; add the eggs and beat for another minute.
5 Add the orange juice and vanilla and blend well.
6 Add the nuts and process just till mixed in.
7 Divide batter between two buttered and floured loaf pans and bake 45 to 50 minutes, or until well browned.
8 Let cool in pans for 10 minutes; then turn out on a wire rack to cool completely.
