Butterscotch Thins

 
 
 
Definitely a family favorite!
 
12 ounces    Butterscotch morsels  
1 cup    Butter  
1-1/3 cups    Light brown sugar, packed  
2   Eggs  
2-2/3 cups    Sifted flour  
1-1/2 teaspoons    Baking soda  
2/3 cup    Chopped nuts  
1-1/2 teaspoons    Vanilla  
 
1 Melt the butterscotch morsels and butter over hot water. Remove from heat.
2 Beat in the brown sugar and eggs.
3 Sift together the flour and soda and add to the butter mixture. Add the nuts and vanilla.
4 Shape into two 12" rolls. Wrap in plastic wrap and chill thoroughly.
5 Preheat oven to 375°. Slice dough very thin. Place on an ungreased cookie sheet. Bake 5 to 6 minutes. Cool slightly before removing from cookie sheet.
 
Yield: About 16 dozen
