Carrot Cinnamon Cake

 
 
 
This cake doesn't need frosting and will keep well, if it's well hidden!
 
3   Eggs  
½ cup    Oil  
3 cups    Sugar  
2 tsp    Vanilla  
1 cup    Crushed pineapple, drained  
1 cup    Nuts, coarsely chopped  
2 cups    Grated carrots  
1   Very ripe banana, mashed with a fork  
  Grated orange peel (optional)  
3 cups    Flour  
1 tsp    Soda  
6 tsp    Cinnamon  
1- 1/2 tsp    salt  
 
1 Cream together the eggs, oil and sugar.
2 Add the vanilla, pineapple, nuts carrots, banana, and grated orange peel.
3 Combine the flour, soda, cinnamon and salt, add to first mixture and mix well.
4 Bake in well greased and floured bundt pan at 325° for 1½ hours.
