Cracker Pie

This makes a really nice sized pie by using half again the amount of ingredients and baking in a 10 inch glass pie plate. Takes a little longer to bake but makes a lot more pie! Let people guess what it's made of!
4   Egg Whites  
1 cup    Sugar  
18   Coarsely Crumbled Soda Crackers  
3/4 cup    Chopped nut meats (Walnuts or Pecans, or?)  
1 tsp    Baking powder  
1 tsp    Vanilla  
  Sweetened whipped cream or whipped topping  
1 Beat egg whites until foamy.
2 Add sugar gradually, beating until stiff peaks form.
3 Toss together the crackers, the baking powder and chopped nuts.
4 Fold into the beaten egg whites with the vanilla.
5 Spread in a buttered 9 inch pie pan and bake at 350° for 45 minutes or until dry. Leave in oven with door open until cool. Refrigerate at least two hours before serving.
6 Spread with the whipped cream just before serving.
