Cream Wafers

 
 
 
These are labor intensive, but the joy of eating them outweighs the effort - so ration them!
 
Wafers:  
1 cup    Soft butter  
1/3 cup    Thick cream  
2 cups    Flour  
FILLING:  
1/4 cup    Soft butter  
3/4 cup    Powdered sugar  
1   Egg yolk  
1 tsp    Vanilla  
 
For wafers:
1 Mix the butter, cream and flour to form a soft dough. Chill.
2 Roll a third of the dough at a time, 1/8" thick on a lightly floured board. Cut with a 1-1/2" round cookie cutter.
3 Sprinkle sugar on each side of the round. Prick each cookie four times with a fork.
4 Bake on an ungreased cookie sheet for 7 to 9 minutes in a 375° oven. Cool.
For filling:
1 Cream filling ingredients together. Spread filing between pairs of cookies.
