Fresh Apple Cake

 
 
 
1-1/4 cups    Corn Oil  
2 cups    Sugar  
3 large    Eggs, well beaten  
3 cups    Apples, peeled, cored and chopped  
1 cup    Pecans, chopped  
3 cups    Cake Flour  
1 tsp    Baking soda  
1/4 tsp    Salt  
2 tsp    Vanilla  
For icing:  
¾ cup    Butter or margarine  
1½ cups    Light brown sugar, firmly packed  
½ cup    Condensed milk  
2 tbs    Vanilla  
1 cup    Coconut  
 
1 Combine oil, sugar and eggs together.
2 Add the apples and pecans.
3 In separate bowl, sift then measure the cake flour.
4 Add the soda and salt and sift 2 or 3 times more. Add to first mixture. Stir well; add vanilla.
5 Grease and flour four (4) 9" layer pans. Divide batter amongst the four and bake at 325° for 35 minutes.
For icing:
1 Heat butter and brown sugar on low.
2 Add condensed milk and let come to full boil. Remove from heat and cool.
3 Add vanilla.
