Italian Biscotti

 
 
 
1 cup    Oil  
3   Eggs, beaten  
2 tsp    Vanilla  
3 tbs    Orange peel  
4 cups    Flour, sifted  
1 tsp    Salt  
4 tsp    Cinnamon  
1 cup    Sliced almonds  
 
1 Mix oil and sugar; add beaten eggs, vanilla, almond extract and orange peel. Blend thoroughly.
2 Combine flour, salt, cinnamon and baking powder. Add to oil mixture; add almonds.
3 Roll into ropes the size of a 3/8" sausage (you may need a little flour to roll).
4 Place on greased cookie sheet; bake at 325° for 40 minutes or until golden color.
5 Remove and slice on an angle into 2-1/2" lengths. Place cut side up and return to oven 10 minutes to brown (watch closely at this point.) .
