Lillikoi Jelly

3 cups    Sugar  
1 cup    Water  
½ cup    Lillikoi Juice  
1 pouch    Certo  
1 Bring sugar and water to a full rolling boil, and boil for one full minute. Remove from heat.
2 Add Certo and mix rapidly to blend.
3 Add juice and stir well.
4 Pour into sterilized glasses and seal immediately or cover hot jelly with paraffin.

Each "batch" makes 4 - 8 oz glasses of jelly.

While the author of this recipe remains unknown, it originated in Hawaii many, many years ago. The only jelly recipe I've ever where the fruit juice is NOT cooked with the sugar/water mixture. It is delicate in taste and totally habit forming. You'll love it!
