Mango Bars

For crust:  
2 cups    Flour  
½ cup    Sugar  
1 cup    Butter  
For filling:  
4 cups    Chopped mangoes  
¾ cup    Sugar  
1/3 cup    Water  
1 tsp    Lemon juice  
3 Tbs    Corn starch  
3 Tbs    Water  
For topping:  
2 cups    Quick oats  
¼ cup    Flour  
½ cup    Sugar  
2/3 cup    Butter  
For crust:
1 Preheat oven to 350°.
2 Combine flour with sugar.
3 Cut in the butter.
4 Press into a 13" x 9" x 2" pan. Bake for 7 to 10 minutes or until lightly browned.
For filling:
1 In a saucepan, combine mangoes, sugar, water and lemon juice. Cook until mangoes are tender, about 10 minutes.
2 Combine cornstarch and the 3 tablespoons water.
3 Stir into mango mixture and cook until thickened. Cool slightly. Pour over prepared crust.
For topping:
1 Combine oats, flour, and sugar. Cut in butter.
2 Sprinkle over mango mixture. Bake for 50 minutes. Cool and cut into bars. Gooooood!
Yield: Makes 4 dozen
