Mexican Jalapeno Rice

 
 
 
According to Aunt Virginia, this dish is rich, so small servings are desirable. Real tasty and quite unusual - good with most any meal, but best with Roast Beef or BBQ Chicken. (For Jenae, the rice dish itself IS a meal!)
 
1 cup    Cooked rice  
¼ cup    Butter or margarine  
½ cup    Chopped onions  
½ cup    Diced green peppers  
1   Diced jalapeno pepper  
1-2 cans    Diced green chiles  
8 oz    Sour cream  
1 cup    Grated Longhorn cheese  
1 cup    Grated mozzarella cheese  
 
1 Saute onion, green peppers, and jalapeno in butter.
2 Add rice.
3 Stir in green chilies, sour cream and the grated cheeses.
4 Pour into greased casserole and bake at 350° for 30 minutes.
