Nut Caramel Fudge

 
 
 
This is one of our favorites!
 
3 cups    Sugar  
2/3 cup    White Karo syrup  
1 stick    Butter  
7 oz    Can condensed milk  
1-2 cups    Nuts  
 
1 Cook all ingredients (except nuts) in heavy pan to 235 ° on candy thermometer, or firm ball stage.
2 Beat in mixer for five minutes at high speed. If too hard, add 1 tablespoon of canned milk.
3 Reduce speed and blend slowly until it begins to lose shiny appearance - altogether 15 to 20 minutes.
4 Add nuts, folding in slowly.
5 Put in 8 or 9 inch square pan to cool. Cut while warm.
 
 Cooking Tips
The flavor changes dramatically with different kinds of nuts. Try it with black walnuts! Only terrific!
