Red Velvet Cake and Icing

 
 
 
½ cup    Shortening  
1½ cups    Sugar  
2   Eggs  
2 oz    Red food coloring  
1 tsp    Salt  
2½ cups    Flour  
2 tbs    Cocoa, level  
1 cup    Buttermilk  
1 tb    Vinegar  
1 tsp    Soda  
1 tsp    Vanilla  
For Red Velvet Icing:  
1 cup    Milk  
¼ cup    Flour  
½ cup    Shortening  
½ cup    Butter  
½ tsp    Vanilla  
1 cup    Granulated sugar  
 
1 Cream shortening and sugar.
2 Add eggs and coloring.
3 Sift flour, salt and cocoa together. Add alternately with buttermilk.
4 Add vanilla, then mix soda and vinegar, fold lightly into batter.
5 Prepare two layer cake pans (8-9") by greasing and floured with cocoa. Bake 25 to 30 minutes at 350°.
To prepare Red Velvet icing:
1 In saucepan, blend milk with flour and cook, stirring constantly, until thick. Chill.
2 Cream sugar and shortening together until fluffy.
3 Add the cooled sauce and vanilla. Beat for 20 minutes (yes, really - 20 minutes!).
 
 Cooking Tips
Can be made in an electric mixture, same time required.
