Rice Pilaf

 
 
 
This casserole goes with many menus and is truly well loved and well used.
 
½ cube    Butter  
1   Onion, Minced  
1 cup    Uncooked Rice  
1 small    Green Bell Pepper, Chopped  
1 can    Sliced Mushrooms, Stems and Pieces  
1 can    Consomme  
1 Tbs    Soy Sauce  
2/3 cup    Water  
 
1 Saute the butter, onion, rice and green pepper together for 10 minutes, until rice browns.
2 Add mushrooms, with liquid, the consomme, soy sauce and water. Bring to a boil.
3 Put in an ungreased 2 or 2-1/2 quart casserole, cover, and bake at 400° for 25 minutes, until liquid is absorbed.
