Rigatoni

 
 
 
1 lb    Ground beef  
1   Onion, diced  
2-3 cloves    Garlic  
3 Tbs    Chili Powder  
2 cans (8 oz each)    Stewed tomatoes  
1 cup    Cottage Cheese  
1 sm can    Sliced black olives  
1 lb    Jack Cheese  
8 oz    Rigatoni noodles  
 
1 Brown onion and beef; add chili powder and garlic; cook additional 5 minutes.
2 Add stewed tomatoes and cook an additional 10 minutes.
3 Cook Rigatoni noodles per package directions; drain.
4 Add sliced black olives to noodles, stir to distribute.
5 Add Cottage Cheese to noodle mixture and stir again to allow mixture to combine.
6 Add beef/tomato sauce mixture to noodle mixture; stir well to combine.
7 Pour into baking dish and cover with sliced Jack cheese.
8 Bake at 350° for 20 minutes or until bubbly.
