Rissa's White Cake

Helen says this is the BEST white cake she's ever tasted!
1½ cups    Sugar  
½ cup    Butter, scant  
2½ cups    Flour  
1 cup    Cold water  
3 tsp    Baking powder, level  
3   Egg whites, beaten  
  Lemon extract  
1 Cream together the sugar and butter until light and fluffy.
2 Blend in 2 cups of the flour, alternating with the cup of cold water (always flour first). Beat well after each addition.
3 Gently fold in the beaten egg whites along with the extracts and salt.
4 Then add the rest of the flour and baking powder.
5 Pour into prepared layer cake pans (you know, greased and floured) and bake at 350° for 20-25 minutes.
