Sticky Pecan Rolls with Sweet Bread Dough

Pecan rolls became a traditional favorite for Christmas morning -- coffee and pecan rolls are the order of the day for opening of presents! You can use the "Sweet Bread Dough" recipe here or use thawed, frozen bread dough. Prepare the rolls the night before, cover with greased foil and refrigerate overnight. In the morning, remove from the fridge and, by the time the oven is preheated, the rolls will be ready to pop into the oven. Eat and enjoy!
Sweet Bread Dough:  
1 cup    Heavy cream  
¼ cup    Evaporated milk  
3   Egg yolks  
3 tbs    Butter or margarine  
¼ cup    Sugar  
1 tsp    Salt  
1 tsp    Cinnamon  
1 tsp    Nutmeg  
3 1/3 cups    Bread flour  
2 tsp    Dry yeast  
1½ cups    Brown sugar  
¾ cup    Dark corn syrup  
6 tbs    Butter  
1½ cups    Pecans  
For Topping:
1 Heat all the above ingredients until sugar is dissolved. Boil hard for 1 minute. Pour equally into two 7" x 11" baking pans. Sprinkle with the pecans. Use the "sweet bread dough" recipe for the rolls.
For Sweet Bread Dough:
1 Use bread machine to mix dough ingredients Allow dough to rise until doubled in bread machine or covered, in a greased bowl.
2 Punch dough down and roll into a large rectangle (about 10" x 15").
3 Slather soft butter to the edges; sprinkle generously with sugar and cinnamon.
4 Beginning on the long side, roll dough up tightly. Secure the seam by pinching the dough together.
5 Cut into 1" slices and lay cut side up on the pecans. Bake at 375° for 25 minutes.

Lauri found the Sweet Bread Dough recipe in December, 1996!: "Had the bread machine mix the dough, naturally. The flavored dough really is wonderful! I used evaporated milk for both the heavy cream and the evaporated milk. This is for a large batch. This year, I also heated the brown sugar with a little touch of water (to make it liquid) and let it come to a boil. Then I slowly added the butter, let it melt and cool a bit and poured it into the pans. Sprinkling pecans over this caramel mix completes the picture."
