Volcano Cookies

 
 
 
These are not only good, but very pretty! Pretty is good!
 
2 cups    Flour  
2 tbs    Baking powder  
½ tsp    Salt  
4 squares    Unsweetened chocolate  
2 cups    Sugar  
½ cup    Salad oil  
4   Eggs  
2 tbs    Vanilla  
  Powdered sugar  
 
1 Melt chocolate over hot water. Set aside.
2 Mix together the melted chocolate, oil and sugar.
3 Add unbeaten eggs, one at a time, beating after each addition.
4 Sift flour, baking powder and salt together. Add this gradually to the chocolate mixture. Add vanilla.
5 Cover bowl and put into refrigerator for 24 hours.
6 Use a teaspoon to scoop dough into the size of a small walnut. Roll in hand to form a ball; then flatten with the palm of the hand; dredge thoroughly in powdered sugar and place on ungreased cookie sheet.
7 Bake at 350° for about 6 minutes. Cookies puff up a bit and then flatten out when cool. Let them cool a minute before removing from cookie sheet.
 
 Cooking Tips
Messy to work with and dough should be taken from refrigerator in small quantities to form into balls. Remove from oven when they look like they are not quite done.
