Zucchini Bread

 
 
 
3   Eggs  
1 cup    Sugar  
1 cup    Brown sugar  
1 cup    Salad oil  
3 teaspoons    Vanilla  
2 cups    Coarsely grated zucchini  
3 cups    Flour  
3 teaspoons    Cinnamon  
1 teaspoon    Salt  
1 teaspoon    Soda  
1/2 cup    Chopped nuts  
 
1 Grease two loaf pans well and dust with flour.
2 Beat together the eggs, sugars, salad oil and vanilla.
3 Stir in zucchini.
4 Sift the flour, cinnamon, salt and soda together and add to the first mixture.
5 Add nuts.
6 Divide batter between the two pans and bake at 325° for one hour, or until bread tests done.
